Appellation: Controlled Appellation of Origin (AOC).
Grape variety: 100% Sauvignon.
Vinification: Fermentation in thermo-regulated stainless steel vats, aging for 9 months, bottled by the estate.
Vineyard management: Simple Guyot pruning, with a density of 7,500 hectares, controlled grassing, green harvest 30 days before harvest.
The vineyard 5 Hectares: with vines averaging between 10 to 30 years old.
Tasting notes: Pale yellow color, brilliant. Chiseled nose, very expressive, combining floral notes and grapefruit flesh. The citrus notes show up in a straight, fresh, persistent palate. Beautiful expression of Sauvignon.
Food pairing:This Saint Bris can be served fresh at aperitif time, with seafood or shellfish, exotic cuisine, and fish as well as cuisine featuring goat cheese.
Aging potential: 1 to 4 years.
